What are the advantages of blast cooling and decoupled cooking?
The decisive advantage of decoupled cooking lies in the fact that the production time and the serving time can be different. This gives the opportunity to set up a more flexible and rational production schedule, which also falls within the normal working hours of the kitchen staff. In the central kitchens where distribution to meal distribution points also takes place, it is also noted that refrigerated transport is simpler than heated transport as well-refrigerated product has a shelf life of several days, while hot product may not be kept warm for more than, for example, an hour. As a result, chilled delivered meals can be served at any time of the day. What are the benefits for the end user? - Greater meal choice possible - Individual eating times possible - Cheaper meals - Portion size can be individually adjusted - Lower risk of spoilage What are the benefits for the kitchen staff? - 5-day working week possible for the production kitchen, also at Serving 7 days a week. - Optimal use of available kitchen equipment - More time available for preparation and finishing. - Less stress, calmer, planned work. Jos ten Berg BV supplies a complete range of tableware parts for linked cooking. The linked cooking program consists of plates, three-compartment plates, cloches/lids and underplates made of stainless steel and soup cups with lids made of stainless steel.
The benefits of decoupled cooking
If you choose decoupled cooking, you are more flexible because you can plan the production time and the serving time yourself. For central kitchens where food distribution to meal distribution points takes place, decoupled cooking also offers the advantage that transporting chilled food is easier than transporting heated food. In addition, refrigerated transport promotes shelf life. These advantages make it possible to transport, heat and serve decoupled (chilled) meals at any time of the day.
