Kitchen knives
GoldGlocke kitchen knives, history
185 years ago, in the year 1836 to be exact, the founder of Jos ten Berg's first entity established himself as a knife maker in Utrecht. This Johannes Hendrikus (1761-1835) started that year with the traditional production of professional kitchen and chef knives, bearing the De Klok brand. In the meantime, the company has developed into an all-in Non-Food supplier in the hospitality, catering, healthcare and government institutions, now under the management of the 7th generation.
In its 185 years of existence, Jos ten Berg has grown into a specialist in professional table and kitchen items and large kitchen projects with sales activities in the Netherlands, Germany, Belgium, Sweden and France.

The current range of kitchen knives or chef's knives includes the GoldGlocke, Technique and Absolute Steel series.
The Goldglocke knives are of sublime quality and inspired by the quality that Johannes Hendrikus produced in a traditional manner 185 years ago. In the intervening century and a half, there have been many developments that have brought the quality of these top knives to the current high level. What Johannes Hendrikus had to miss in his time are the greatly improved properties of knife steel. Not only the GoldGlocke Series, but also the Technology Series and Absolute Steel are forged from a perfect alloy of blade steel that is technically referred to as X50CrMoV15. X stands for stainless, 50 for 0.50% carbon and 15 for 15% Chromium, Vanadium and Molybdenum.
This alloy is also called German Steel. The other top German manufacturers also use the same alloy.
Maintenance of kitchen knives
The GoldGlocke, Techniek and Absotlute steel kitchen knives do not require any special maintenance. The excellent knife steel is completely stain-free and needs to be cleaned thoroughly.
The steel is very tough and has a long sharpness retention. This means that the knives remain sharp for a long time. After prolonged use, the knives will need to be sharpened.
You can use a sharpening steel or knife sharpener for this. Sharpening steel-round-goldglocke, Knife sharpener-for-chef's-knives-chefs-choice, Knife sharpener-chefs-choice-hand model
